    How to use the focaccia calculator

    1. Choose your pan – rectangle or round – and enter its size in inches or centimeters.
    2. Pick a thickness. Classic works for most people; thick and pillowy is great for sandwiches.
    3. Weigh the ingredients shown. The dough is sized to your pan so it fills it evenly.

    How much focaccia dough per pan?

    We size dough by pan area. A classic focaccia uses about 7 g of dough per square inch (roughly 1.1 g per cm²).

    Sourdough focaccia method

    1. Mix flour, most of the water and the starter. Rest 30 minutes, then add salt, the remaining water and the olive oil, squeezing it in until absorbed.
    2. Bulk ferment 4–6 hours at room temperature with 3–4 sets of coil folds in the first 2 hours.
    3. Optional cold rest: refrigerate the dough overnight (12–24 hours) for more flavor and bigger bubbles.
    4. Pan it. Pour the oil into the pan, tip in the dough, and gently stretch it towards the corners. If it springs back, wait 15 minutes and try again.
    5. Final proof 2–4 hours until puffy and jiggly.
    6. Dimple and top. Drizzle with oil, press your fingers all the way to the bottom of the pan, and add flaky salt and rosemary.
    7. Bake at 230 °C / 450 °F for 22–28 minutes until deep golden on top and crisp underneath.

    Frequently asked questions

    How much dough for a 9x13 focaccia?

    About 800–850 g of dough for a classic thickness (roughly 7 g per square inch). Use about 650 g for thin focaccia and 1,000 g for a thick, pillowy one.

    What hydration is best for focaccia?

    75–85%. Higher hydration gives bigger bubbles and a lighter crumb. The pan does the shaping, so wet dough is not a problem – coat your hands with oil to handle it.

    How much olive oil goes in the pan?

    About 2–3 tablespoons (30–45 ml) for a 9x13 pan – enough to coat the bottom generously. It fries the base so it turns crisp and golden.
